I'm enjoying the variety in breakfast now since I've discovered the okayness of pre-frying my eggs to sit on top of my meat of choice. Nothing tastes better under eggs than crispy carnitas...and I mean nothing! Paired that with some avocado and I was set all morning.
Lunch was left over scallop chowder, so yummy! I was slightly sad that I got home and realized I had wings left and didn't pack those...but don't worry I had those as a snack in the evening.
I had originally cooked the carnitas for dinner tonight since I work late on Monday's and the boy has some sports practice...too many to keep straight! So the hubs cooked up some peas and reheated the meat and that was done! I swung by for a few minutes to eat quickly and hop in the car before going to watch several cute 7 year olds try to be the next Michael Jordan....love the sweet dreams and goals of kids!
